If you took real south Texas bbq spice and crossed it with Louisiana blackening spices the result would be what we have used on our grill at the ORT for years. The Grilling spice is mixed here at the restaurant in small batches by hand from the same recipe we developed after years of tinkering.
We use this spice on chicken, fish, shrimp, pork and steak. The spice hits the heat and creates a charred exterior on any grill or watch it make anything wake up by pan grilling in a skillet. Just about anything can use a little Wild West in it in the kitchen! We add onion, garlic, cayenne and red pepper with a splash of hungarian paprika that creates a perfect blend- not overloaded on heat and not too salty to make your mouth wish for a glass of water. Of course, we don't add any MSG to our Wild West grilling spice. Hint: Ya'll pan fry some eggs in the morning and splash some hot pepper sauce and a dash of lemon juice and you'll see what we're talking about!
