Over 27 years ago our family opened a bbq restaurant in Tomball, Texas. The single most important thing on the menu at the Original Rib Tickler was and is you guessed it- Ribs!!! OK ya'll, Rib Rub is a BBQ term used in Texas for a spice blend "rubbed" into the meat and then, if you know what you're doing, you let that spice sit for a while and permeate into the Rib so it takes on the flavors.
At the Original Rib Tickler we let ours sit overnight but in a pinch a few hours will work just fine. Mom came up with this recipe the first week we opened and it was dead on perfect and we haven't changed it since that first week in business in 1984. We still make this in small batches(2 gallons to make sure its right) by hand and the original recipe is known by all of four people(Mom,Dad, Son #2, and pitmaster of 22 years). A dash of salt(too much dries the meat!), chili pepper, paprika, garlic, onion just to name a few on the list. No, you can't have the whole list. Rub this on any Rib, pork tenderloin, beef roast, pork butt or even a brisket and start smoking the good stuff.
